It comes down to how the network is designed, Meshtastic is open source, you can go look at how the encryption works right now. There are issues with Meshtastic from a privacy standpoint but you could somewhat trivially design a derivative that is much more zero trust.
As with all things, layer your defenses. Not using the network that’s known to be surveiling you and instead using one that you have some confidence is leaking less info on top of the usual precautions is a solid improvement.
It’s another thing they have to do. They’re not all RF/SW engineers so they’d have to adapt to it the same way they’d adapt to anything else. By building networks that aren’t corporate controlled, however, activists can engineer them around anonymity instead of serving the police.
Since nobody has mentioned it, all of this is turbo illegal and the federal courts will absolutely nuke this from orbit. State governments do not control airspace, full stop. The courts have been very clear on this. Manned vs unmanned doesn’t matter to the FAA, it’s still one hell of a PP slap from the feds for encroaching on their turf. Additionally, any form of jamming (desense, deauth, noise, location spoofing, fraudulent signals etc) is illegal and regulated by the FCC, and doing it with intent to take down an aircraft means you get strung up by both the FCC and FAA simultaneously. In particular doing literally anything to the GPS band will pose a massive and immediate risk to manned passenger aircraft and the feds aren’t going to look kindly on that.

This is wild because it’s gotten so easy to track everything. Everyone has a nearly government mandated tracking device shoved up their ass at all times, everything under the sun has a camera on it and your car is phoning home with your sex acts but apparently knowing what every single human is doing every picosecond of the day isn’t enough and they need more tanks.
That said, if I had to guess, at least some of the “clearance” in the past was just picking a random black person and stringing them up then going out for doughnuts
